HAM & CHEESE STUFFED POTATOES 
4 lg. baking potatoes
1 tsp. shortening
6 tbsp. butter
2 tbsp. grated onion
1/4 tsp. pepper
2 eggs
6 oz. (1 1/2 c.) grated Cheddar cheese
6 oz. (1 c.) diced cooked ham

Heat oven to 375 degrees. Scrub potatoes; pat dry. Rub each potato with shortening, prick several places with fork. Bake at 375 degrees for about 1 hour or until done. Cut potatoes in half lengthwise; scoop out inside leaving a thin shell. Place shells on cookie sheet.

In large bowl, beat potatoes. Add butter, onion, pepper and eggs; continue beating until mixture is smooth and fluffy. Fold in 1 cup of the cheese and ham. Fill potato shells with mixture; top with remaining 1/2 cup cheese. Sprinkle with paprika. Bake at 375 degrees for 15-20 minutes or until potatoes are heated and cheese is melted.
