CHOLESTEROL FREE SUNRISE MUFFINS 
1/2 c. hot water
3/4 c. raisins
2 1/4 c. all-purpose flour
3/4 c. sugar
1 tbsp. baking powder
2 tsp. grated orange rind
1/8 tsp. cinnamon
1/8 tsp. nutmeg
3/4 c. Weight Watcher's mayonnaise
3/4 c. frozen cholesterol free egg product, thawed
1 tsp. vanilla extract

Spray a 12-cup muffin pan with non-stick cooking spray. Add water to raisins; set aside to cool.

In bowl, combine flour and next 5 ingredients. Blend mayonnaise, egg product and vanilla; stir in raisins and water. Pour mayonnaise mixture to flour mixture, stir until just moistened. Fill each muffin tin with 1/3 cup batter.

Bake in preheated 375 degree oven 22 to 25 minutes or until muffins are golden brown. Remove from pan; serve warm. Makes 12 muffins.
