SWEET POTATO CASSEROLE | |
3 lb. sweet potatoes, baked in oven until soft 2 eggs 3/4 c. brown sugar 1/2 c. butter, melted 1 tsp. cinnamon 1 tsp. salt Orange juice just to moisten 1 c. pecans In large mixing bowl beat sweet potatoes, add eggs. Add 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon; mix well. Add orange juice a drop at a time, just until moist and fluffy. Smooth into casserole. Top with pecans, sprinkle with brown sugar and remaining melted butter. Bake uncovered at 375 degrees for about 20 minutes. |
