GLAZED CARROT (OR PARSNIP)
STICKS
 
1 1/2 lb. carrots or parsnips
2 tbsp. butter
3 tbsp. honey
1/4 tsp. cinnamon, more if desired

Peel and cut into 2 inch sticks (logs) the carrots or parsnips. Cook sticks in boiling, salted water (or steam) for 5-10 minutes until almost tender. Drain. Melt butter combined with honey and cinnamon. Add sticks and saute over medium heat, stirring often, until liquid is absorbed, about 10 minutes. Serve immediately. Serves 4.

Sticks may be cooked, refrigerated and glazed just before serving.
