GOLDEN GLAZED CARROTS 
3 tbsp. butter
1/2 c. orange juice
1/3 c. honey
2 tsp. grated orange peel
Pinch ground nutmeg
10-12 carrots, cut into 1/2" slices (about 6 c.)

Melt butter in a large skillet. Stir in orange juice, honey, orange peel and nutmeg. Add carrot slices, tossing to coat thoroughly. Cover and cook over medium-high heat for 10 minutes. Reduce heat, uncover and continue to cook, stirring occasionally until carrots are tender and richly glazed. Yield: 6 to 8 servings.
