SCALLOPED CABBAGE 
Cook 1 head of cabbage, cut coarse
Add 1 tbsp. salt and drain well

CHEESE SAUCE:

4 tbsp. butter
4 tbsp. flour
1 tsp. salt
2 c. milk
1/2 lb. cheese (Velveeta or Colby)
2 c. bread crumbs
2 tsp. butter

Melt butter and mix flour and salt and cook on low flame. Add milk and bring to a boil stirring constantly. Remove from heat. Add a scant 1/2 pound cheese, cut in chunks. Spread on top of cabbage.

Grind 2 cups bread crumbs and 2 tablespoons melted butter. Add to top of cabbage. Bake at 350 degrees for approximately 30 minutes or until browned on top and bubbles come through the crumbs.
