EGG AND CHEESE BAKE 
8 eggs
1 env. Italian salad dressing mix
12 oz. cottage cheese
1/2 c. chopped green bell pepper
1/3 c. all-purpose flour
1 tsp. baking powder
1/3 c. melted butter
3 c. shredded Monterey Jack cheese

Beat eggs and dry salad dressing mix in bowl until smooth. Stir in cottage cheese and green pepper; mix well. Add mixture of flour and baking powder. Stir in butter and cheese. Pour into greased 8x8 inch baking pan. Bake at 375 degrees for 35 minutes or until golden. Yield: 8 servings.
