PINEAPPLE CASSEROLE 
2 (20 oz.) cans chunk pineapple
1 stick butter
1 c. sugar
4 tbsp. pineapple juice
2 c. shredded cheddar cheese
20 Ritz crackers, crushed
3 tbsp. plain flour

Drain pineapple chunks and reserve juice. Melt butter and stir in the sugar, flour, and pineapple juice. Stir in pineapple chunks and cheese. Pour into large 9x13 baking dish. Bake 20 minutes at 350 degrees. Remove from oven and sprinkle Ritz crumbs over top. Reduce heat to 300 degrees and bake 20 more minutes. Delicious with ham or BBQ chicken.
