IRISH APPLE COBBLER PIE 
1 egg yolks
1 Keebler graham cracker ready pie crust (extra serving size)
5 med. green skinned Granny Smith apples
1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. golden currants
3 eggs
1 c. whipping cream
1 tbsp. vanilla
1/4 c. flour

Brush pie bottom and sides with egg yolk. Bake at 375 degrees for 5 minutes. Cool. Core and slice apples, do not peel. Toss in bowl with spices and currants. Lay in pie shell in a circular fashion, over-lapping. Bake 20 minutes at 375 degrees. Beat eggs and sugar until mixture is pale yellow; add cream and vanilla. Add flour and mix until smooth. Pour cream mixture over apples. Bake 30 minutes until puffy.
