RICH SWEET POTATOES 
3 c. cooked mashed sweet potatoes
1 tsp. vanilla
1/4 c. butter
2 eggs, beaten (not whipped)
3/4 c. sugar

Mix and put into greased casserole.

TOPPING:

1 c. coconut
1 c. brown sugar
1 c. pecans, chopped
1/3 c. butter

Mix topping and spread over mixture. Bake at 375 degrees until brown. This is best if made a day before you plan to serve.
