APPLE NUT COFFEE CAKE | |
1/2 c. shortening 1 c. granulated sugar 2 eggs 1 tsp. vanilla 2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt (optional) 1 c. sour cream 2 c. finely chopped apples 1/2 c. chopped nuts 1/2 c. packed brown sugar 1 tsp. cinnamon 2 tbsp. melted butter In mixing bowl cream together shortening and granulated sugar. Add eggs and vanilla, beat well. Then add sour cream and stir. Then add flour, baking soda and baking powder and stir thoroughly. Fold in finely chopped apples. Combine chopped nuts, brown sugar and cinnamon. Stir in 2 tbsp. melted butter. Sprinkle nut mixture evenly over the batter. Spread batter in a greased 13x9x2 inch baking pan. Bake 350 degrees 35-40 minutes. 24 servings. |
