PICNIC CAKE 
2 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
2 eggs
2 c. sugar
1 (16 oz.) can crushed pineapple
1 c. chopped pecans
1 c. coconut

FROSTING:

4 oz. cream cheese, soft
4 oz. butter
2 c. confectioners' sugar
1/2 tsp. vanilla

Sift the dry ingredients and set aside. Cream eggs and sugar, work in the flour mixture. Add pineapple, nuts and coconut. Pour into greased and floured 9"x13" baking pan. Bake at 350 degrees for 35 to 45 minutes. Cream together soft cream cheese and butter. Add the sugar and vanilla. Blend until smooth.
