MOCK APPLE PIE (ZUCCHINI BARS) 
CRUST:

4 c. flour
1/2 tsp. salt
1 tsp. cinnamon
2 c. sugar
3 sticks butter

Mix dry ingredients in bowl. Cut in butter until crumbly. Pat half of mixture in the bottom of 9 x 13 inch pan or pie tins. Bake at 350 degrees for 10 minutes.

FILLING:

8 c. zucchini, peeled and sliced

Cook in 2/3 cup lemon juice until tender.

Add: 1/4 tsp. nutmeg 1/2 tsp. cinnamon

Simmer 1 minute and add 1/2 cup of crust mixture to thicken and let cool. When filling is cool, spread on crust in pan. Add 1 teaspoon cinnamon to remaining crust mixture and sprinkle on top. Bake at 375 degrees for 40 minutes. Serve warm or cool. Tastes like apple pie. No one knows the difference.

Yes you can freeze...my mom has frozen for a year the filling after it's prepared, and it's just as delicious!
