MOCK APPLE PIE (ZUCCHINI BARS) | |
CRUST: 4 c. flour 1/2 tsp. salt 1 tsp. cinnamon 2 c. sugar 3 sticks butter Mix dry ingredients in bowl. Cut in butter until crumbly. Pat half of mixture in the bottom of 9 x 13 inch pan or pie tins. Bake at 350 degrees for 10 minutes. FILLING: 8 c. zucchini, peeled and sliced Cook in 2/3 cup lemon juice until tender. Add: 1/4 tsp. nutmeg 1/2 tsp. cinnamon Simmer 1 minute and add 1/2 cup of crust mixture to thicken and let cool. When filling is cool, spread on crust in pan. Add 1 teaspoon cinnamon to remaining crust mixture and sprinkle on top. Bake at 375 degrees for 40 minutes. Serve warm or cool. Tastes like apple pie. No one knows the difference. |
