SUGARLESS FRUIT CAKE OR MUFFINS 
1 c. chopped dates
1 c. raisins
2 c. whole wheat pancake flour mix
4 egg whites, beaten stiffly with 1 tsp. vanilla
2 tsp. cinnamon
1 c. chopped prunes
2 c. water
1/2 c. chopped pecans

Heat dates, prunes, raisins and water in microwave for 2 minutes (or stove top in 2 quart pan). Cool. Blend cinnamon with pancake flour; add pecans. Fold in egg whites by hand. Add fruit mixture. Spoon into greased and floured tube pan (or makes 24 muffins). Bake at 325 degrees for 30 minutes or until done. May be frozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
