SUGARLESS FRUIT - NUT MUFFINS 
1 c. chopped dates
1/2 c. chopped raisins
1 c. chopped prunes

Bring above to boil with 1 cup water. Cook until soft. Stir in:

1/2 c. butter
1/4 tsp. salt

Let cool, then add:

2 beaten eggs
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1 c. nuts

Put in muffin tins. Bake at 350 degrees for 15 minutes. If desired, bake in 11x7-inch pan about 30 minutes. Will make 32 muffins.

Diabetic exchanges: 1 small muffin equals 1/2 fruit, 1 fat, 1/2 starch. 94 calories 52 mg. sodium, 14 mg. cholesterol, 12 gm. carbohydrates, 2 gm protein, 4 gm fat.
