APPLESAUCE CAKE WITH CARAMEL ICING | |
2 c. sugar 1 c. butter 4 eggs 1 1/2 c. applesauce 1 tsp. baking soda 1 tsp. cloves 2 tsp. cinnamon 2 tsp. nutmeg 3 c. sifted flour 1 tsp. salt 1 c. raisins Cream butter and sugar; add eggs, beat well. Add applesauce and soda. Sift dry ingredients together and add to creamed mixture. Add the raisins. Bake at 325 degrees in a greased and floured tube pan for 1 hour or until done. Can be baked in two 9 inch pans at 350 degrees for 30-40 minutes. NEVER-FAIL CARAMEL ICING: 1 c. butter 3 c. brown sugar 6 tbsp. milk 1 tsp. baking powder Combine butter, brown sugar, and milk. Bring to a boil. Add 1 teaspoon vanilla and baking powder. Beat well and spread over cake. If it gets hard, add a few drops of milk. |
