BRAN FLAKE MUFFINS 
1 c. all purpose flour
1/4 c. sugar
2 tsp. baking powder
2 tsp. baking soda
1/3 c. shortening or vegetable oil
2 c. Bran Flakes (filled with iron)
1 beaten egg
1 c. buttermilk (or milk, plus 1 capful of vinegar)

Combine flour, sugar, baking powder, baking soda, and 1 pinch salt or salt substitute. Mix well. Cut in shortening until mixture looks like dry crumbs or for a more moist muffin use same amount vegetable oil.

Add milk and egg mixed together; mix well. Stir in cereal. (Flake cereal with fruit added is good.) Fill greased muffin pan 2/3 full. Bake 20 minutes at 400 degrees. These freeze very well.
