MOM'S BEST CHOCOLATE CAKE WITH CARAMEL ICING | |
3/4 c. shortening 2 c. brown sugar 1/2 c. milk 3 whole eggs 1/2 c. cocoa 2 c. flour 1 tsp. salt 1 tsp. baking soda 1/2 c. hot water 1 tsp. vanilla Cream together shortening and sugar. Add remaining ingredients in order. Dissolve baking soda with hot water before adding. Bake at 350 degrees for about 25 minutes or until knife comes out clean. Makes 1 (9 x 13 inch) or 2 (8 or 9 inch) round pans. CARAMEL ICING: 1 c. heavy or whipping cream 2 c. brown sugar Boil to a soft ball stage (234 degrees). Drop small amount into cold water, it should not disintegrate, but form a soft, pliable ball. Remove from heat. Beat in 3 tablespoons butter and 1 teaspoon vanilla. Cool until icing is a good spreading consistency. |
