CAJUN RICE AND BEANS 
1 1/2 cups rice
2 lg. onions
2 cloves garlic
6 tbsp. butter
2 lbs. sweet Italian sausage
1 1/2 lbs. boneless chicken
1 can chicken broth
1 can stewed tomatoes
1 (27 oz.) can kidney beans
1/2 c. celery, including tops
4 tbsp. Cajun seasoning
2 tbsp. Worcestershire sauce

Melt butter in a large pot over medium heat. Add onions, garlic and celery, cook until softened. Cut sausage into rounds and brown in pot with butter and onions. Dice chicken into large cubes and add to sausage. Saute for 15 minutes. Add chicken broth, stewed tomatoes, cover and simmer for 30 minutes. Add remaining ingredients, except for beans, cover and simmer until liquid is absorbed and rice is tender. Add drained beans and cook over low heat an additional 30 minutes. Yield: 6 servings.
