BEAN AND SAUSAGE OVER RICE 
1 lb. pkg. Louis Rich smoked turkey sausage
3 green onions, chopped with stems
1 tsp. minced garlic
1/2 tsp. pepper
1 (8 oz.) can tomato sauce
1 (15 oz.) can Progresso black beans, rinsed
1 (19 oz.) red kidney beans, rinsed
1 (14 1/2 oz.) chunky pasta style stewed tomatoes (Del Monte)
1/2 c. water or beer
2 c. cooked rice

Cut turkey into circles, then fourths. Put in skillet and saute with diced green onions and stems and garlic until onions are tender. Add cans of rinsed beans with onions, garlic and turkey mixture. Mix well, then add pepper, tomato sauce and stewed tomatoes with 1/2 cup water. Cook covered on low heat for 15 minutes. Serve over hot rice with French bread. Serves 6-8. (300 calories, 6 g fat)

Good meal on a cold night and easy to make. I added a little cayenne pepper and dried oregano and used chicken broth instead of water. This recipe is definitely a keeper at a reasonable price for ingedients.

Had no clue what to make for dinner and googled some ingredients I had and this came up. We loved it! I substituted green onion for yellow and used rotel tomatoes, served it over rice topped with cheddar cheese. Our family will be having this again, thanks!
