BEAN AND SAUSAGE OVER RICE | |
1 lb. pkg. Louis Rich smoked turkey sausage 3 green onions, chopped with stems 1 tsp. minced garlic 1/2 tsp. pepper 1 (8 oz.) can tomato sauce 1 (15 oz.) can Progresso black beans, rinsed 1 (19 oz.) red kidney beans, rinsed 1 (14 1/2 oz.) chunky pasta style stewed tomatoes (Del Monte) 1/2 c. water or beer 2 c. cooked rice Cut turkey into circles, then fourths. Put in skillet and saute with diced green onions and stems and garlic until onions are tender. Add cans of rinsed beans with onions, garlic and turkey mixture. Mix well, then add pepper, tomato sauce and stewed tomatoes with 1/2 cup water. Cook covered on low heat for 15 minutes. Serve over hot rice with French bread. Serves 6-8. (300 calories, 6 g fat) |
