RICE WITH BLACK BEANS 
1 med. onion, chopped
1 tbsp. oil
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can black beans
1 tsp. oregano leaves
1/2 tsp. garlic powder (I used 2 cloves fresh garlic, minced)
1 1/2 c. Minute Instant rice, brown or white

Cook and stir onion in hot oil until tender, but not browned. Add tomatoes, beans, oregano and garlic. Bring to boil. Stir in rice. Cover, reduce heat and simmer 5 minutes. Remove from heat and let stand 5 minutes. Makes 9 servings.
