4 slices bacon, cut into 1 inch pieces 1 med. onion, diced 2 c. zucchini, diced 1 grated carrot 1 c. diced unpeeled new potatoes 1/4 to 1/2 c. picante sauce 2 tsp. sugar (optional) 1/2 tsp. ground cumin 1 c. diced tomato Garnish: sour cream or grated yellow cheese In a wok or large deep skillet, fry bacon until crisp. Remove bacon but reserve fat. Cook onions in this until tender (1 to 2 minutes). Add zucchini, carrot, potato, picante, (sugar) and cumin. Stir fry on medium high heat (3 to 5 minutes) until vegetables are crisp tender. Stir in tomatoes and cooked bacon until heated through. Serve as a main dish topping with sour cream or grated cheese, or use as a filling for tortillas. |
