EXCELLENT PEACH PIE 
1 fully baked 9" pie shell
5 c. pitted peaches, sliced, tossed in 1 tbsp. lemon juice
1/4 c. plus 2 tbsp. flour
1/2 c. light brown sugar, packed
1/4 tsp. ginger
1/4 tsp. cinnamon
1/4 tsp. mace

Blend flour, both sugars and spice in large bowl. Add peaches. Dump into pie shell. Combine 3/4 cup flour, 1/2 teaspoon nutmeg, 1/4 cup sugar and 1/4 cup light brown sugar. Cut in 5 tablespoons butter. Stir in 1/2 cup chopped walnuts. Spread the above evenly over top of peach mixture, pressing down lightly. Bake in preheated 375 degree oven for 1 hour or until topping looks like cooked jam. Cool. Serve barely warm or at room temperature. Note: Topping may be used over an apple pie also.
