PEACHY PEACH SQUARES | |
3/4 c. plus 3 tbsp. sugar 1/2 tsp. ground ginger 5 med. sized fresh peaches pitted and sliced, NOT PEELED 1/2 c. butter at room temp. 2 eggs 1/2 tsp. vanilla 1 1/2 c. unsifted flour 1 tsp. baking powder Combine 3 tablespoons sugar and ginger. In a small bowl combine peaches and sugar mixture. Let stand 30 minutes, stirring occasionally. In small bowl combine the 3/4 cup sugar with butter and cream. Add eggs one at a time, beat well after each addition. Beat in vanilla. Sift together flour and baking powder. Stir into creamed mixture. Spread batter into buttered 9x13 inch pan. Spoon peaches and liquid over batter. Bake 45 minutes at 350 degrees. Cool thoroughly in pan, cut into squares. Yield: 12 squares. |
