RHUBARB BARS 
3 c. rhubarb
1 1/2 c. sugar
2 tbsp. cornstarch
1/4 c. water
1 1/2 c. oatmeal
1 1/2 c. flour
1 c. brown sugar
1/2 tsp. baking soda
1 c. shortening
1/2 c. nuts
1 tsp. vanilla

Dissolve cornstarch in water. Mix rhubarb, sugar, and vanilla together; cook until thick. Mix oatmeal, flour, brown sugar, soda, shortening and nuts together until crumbly. Put 3/4 of this mixture into 9x3 pan. Pour in cooled rhubarb mixture and sprinkle remaining crumbs over top. Bake in 375 degree oven for 30-35 minutes.
