PEACH JAM 
1 1/2 lbs. pitted peaches, peeled
1 1/2 lbs. sugar
Rind of orange, grated
Juice of 1 orange
2 oz. maraschino cherries, chopped
2 oz. liquid fruit pectin

Mash peaches together with sugar. Allow to stand overnight. Place mixture in a pot with orange rind, juice and cherries. Cook until rich and creamy (about 1 hour). Mix in the fruit pectin. Remove from stove. Ladle into hot jars and seal. Place in boiling water bath for 12 minutes. Makes 1-2 pints.
