CHUNKY CHOCOLATE CHIP COOKIES 
1 c. butter
3/4 c. firmly packed brown sugar
1 tsp. vanilla
1/2 c. oats
1/2 tsp. cinnamon
8 oz. semi-sweet chocolate chips
2/3 c. chopped nuts
3/4 c. sugar
2 eggs
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 c. coconut
1/2 c. raisins (optional)

Beat butter, sugars, eggs, and vanilla until light and fluffy. Mix in flour, oats, soda, cinnamon, and salt. Stir in chips, coconut, nuts, and raisins. Drop by teaspoonfuls onto ungreased cookie sheets. Bake at 375 degrees for 8-10 minutes or until golden brown. Makes about 4 dozen.
