FUNNEL CAKE 
4 c. flour
1/2 tsp. salt
2 tbsp. baking powder
4 eggs
2 c. milk
1 tbsp. vanilla
Oil for deep-fat frying

Caution: Be careful - the oil is very hot and could burn you.

Sift and measure flour. Place flour in bowl. Add salt and baking powder. Stir. Preheat oil to 375 degrees.

In a separate bowl, mix eggs, milk, and vanilla. Beat with an electric mixer to form a smooth batter, slowly adding dry ingredients to the liquid ones. NOTES: If necessary, add more water to make batter thin enough to run through a funnel.

Holding your finger over the small end of a funnel, pour in some batter. Removing your finger and starting at the center of the pan, drop the batter into oil in any design.

Fry until golden brown; flip over carefully and continue cooking until second side is golden. Remove from oil with tongs and drain on paper toweling. Sprinkle with powdered sugar (or cinnamon sugar). ENJOY.
