PITA BREAD APPETIZER 
1/2 c. oil (olive is best)
1 clove minced garlic
2 tbsp. minced parsley and/or basil
5 pieces pita bread
Tomato slices
Black olive slices
Roasted red pepper slices
Marinated artichoke hearts, cut into thin slices
Parmesan cheese
Kosher salt

Preheat oven to 400 degrees. Mix oil, garlic and parsley. Split pita and cut each half into 4 pieces. Brush pita pieces with oil mixture. Spread pita pieces on cookie sheets. Arrange tomato slices, olive slices, artichoke slices on top--just a few. Sprinkle with Parmesan and a bit of Kosher salt. Bake until lightly toasted, about 5 minutes.
