CREAM OF BROCCOLI AND CHEESE
SOUP
 
2 c. chopped celery
1 c. finely chopped onion
1 pkg. (10 oz.) chopped broccoli (frozen)
1 c. cottage cheese
2 c. whole milk
1 can (10 3/4 oz.) cream of chicken soup, undiluted
1/2 tsp. salt, if desired
1/8 tsp. pepper

Cook celery, onion and broccoli in 2 1/2 quart covered casserole on High 6 minutes. Stir after 3 minutes. Set aside.

Blend cottage cheese in blender until very smooth. Slowly add milk while continuing to blend. Add chicken soup to cheese milk mixture. Blend and add mixture to cooked and drained vegetables. Microwave on High until heated thoroughly. Add salt and pepper. 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
