BROCCOLI & RICE CASSEROLE 
1 jar mushrooms
2 c. cooked rice
2 (10 oz.) pkgs. broccoli, chopped
1/2 c. onion
1/2 c. butter
1 can cream of chicken or cream of mushroom soup
1 c. evaporated milk
1 c. grated Velveeta or Longhorn cheese

Cook broccoli. Saute onion in butter. Grease 1 1/2 quart casserole. Mix rice, broccoli and onion. Add soup and milk. Mix. Spread cheese on top. Bake at 375 degrees for 15 minutes.
