BROCCOLI AND RICE CASSEROLE 
1 lg. onion, chopped
1/2 c. butter
2 c. cream of chicken soup
1/2 c. milk
1/2 lb. Velveeta, cut in cubes
3 c. rounded, cooked rice
2 pkgs. frozen, chopped broccoli, thawed

Cook onion in butter until tender. Add soup, milk, and cheese. Cook over low heat until cheese melts. Add rice and broccoli. Mix well. Turn into buttered casserole. Bake at 350 degrees for 25 to 30 minutes. Yield: 6 to 8 servings.
