TOMATO, HAM AND SHREDDED POTATO
CASSEROLE
 
4 eggs, slightly beaten
1 c. frozen vegetables (peas & carrots)
1 c. chopped ham
2 tomatoes, diced
1 c. cheddar cheese, shredded
1/2 c. milk
1 tbsp. minced onion
2 c. shredded potatoes

In a bowl, combine eggs, vegetables, ham, tomatoes, cheese, milk and onions. Set aside. Press potatoes onto and up sides of an ungreased 9" pie plate. Pour ham filling into potato crust. Bake in a 350 degree oven for 40 minutes or until center is set. Let stand 5 to 10 minutes before serving. Yield: 6 servings.
