FRESH FRUIT PARFAIT 
2 env. Knox unflavored gelatin
2 c. cold water
1 1/2 c. water, boiling
2/3 c. lemon juice, fresh
9 pkgs. Equal low calorie sweetener
2 med. peaches or nectarines, sliced
1 med. banana, sliced
1 c. seedless grapes, green or red
1 c. strawberries, sliced

In large bowl, sprinkle Knox unflavored gelatin over 1/2 cup cold water; let stand for 1 minute. Add boiling water and stir until gelatin is completely dissolved. Stir in remaining cold water (1 1/2 cups), lemon juice and Equal sweetener. Chill, stirring occasionally until mixture is consistency of unbeaten egg whites. Fold in fruit. Turn into parfait glasses or dessert dishes; chill until firm. Garnish, if desired, with low cal dairy topping and additional fresh fruit/mint. Makes about eight 8 ounce servings. Low calorie/60 calories per serving.
