SWEET CINNAMON QUICK BREAD 
BREAD:

2 c. flour
1 c. sugar
4 tsp. baking powder
1 1/2 tsp. cinnamon
1 1/4 tsp. salt
1 c. buttermilk
1/3 c. oil
2 tsp. vanilla
2 eggs

To substitute for buttermilk, use 1 tablespoon vinegar or lemon juice plus milk to make a cup.

STREUSEL:

2 tbsp. sugar
1 tsp. cinnamon
2 tsp. butter, softened

Heat oven to 350 degrees. Grease and flour bottom only of 9x5 loaf pan. In large bowl combine all bread ingredients; beat 3 minutes at medium speed. Pour batter into prepared pan.

In small bowl, combine all streusel ingredients until crumbly; sprinkle over batter and swirl lightly to marble. Bake at 350 degrees for 45-55 minutes or until toothpick comes out clean. Remove from pan immediately. Cool completely before slicing. Wrap and refrigerate leftover bread. Makes 1 loaf.
