LEBANESE STYLE SALAD 
3 tomatoes
2 cucumbers
1/2 bunch scallions
6-7 stems fresh mint
1 fresh lemon or 1/3 c. lemon juice
1/3 c. olive oil
1/2 clove garlic
1 tsp. salt

Chop tomatoes and cucumbers to bite size. Finely chop parsley, scallions, and mint. Mix vegetables. Mash garlic with salt. Add lemon juice and oil. Pour over vegetables and mix thoroughly.
