DEVILED CRAB CAKES 
1 lb. crab meat, flaked
3/4 c. cracker crumbs
1 lg. egg, lightly beaten
2 tbsp. minced onion
2 tbsp. mayonnaise
1 tbsp. Worcestershire sauce
1 tbsp. prepared mustard
3/4 to 1 1/2 tsp. hot pepper sauce
1 tsp. salt
1/2 tsp. freshly ground pepper
Cracker crumbs
Oil for deep frying

With fork, mix together first 10 ingredients in medium bowl. Form into 3 inch patties and roll in additional cracker crumbs.

Heat oil in skillet or deep fat fryer to 375 degrees. Fry patties until golden brown, about 3 minutes per side. Drain on paper towels and serve immediately. Makes 6 cakes.
