PINTO BEAN SOUP 
1 c. pinto beans
Salt and pepper to taste
6 tbsp. olive oil
1 red onion, chopped
1 slice ham, chopped
1 clove garlic, chopped
1 tsp. fresh rosemary, chopped
1 tsp. fresh thyme, chopped
2 tomatoes, chopped
1 1/2 qts. cold water
2 c. chicken stock

Soak beans overnight and drain. Place beans in enough water to cover by 2 inches. Add salt and pepper. Bring to boil and simmer for 1-2 hours. Drain and set aside.
