CHICKEN AND BLACK BEAN SOUP 
If you want to make this quicker just buy a whole roasted "rotisserie" chicken at your local grocer.

1 whole chicken
2 (15 oz. ea.) cans black beans
1 cilantro stalk, chopped (fresh is always best)
2 garlic cloves, minced
1 small yellow onion
1 jalapeno pepper, seeded and cored
1/2 tsp. salt
pinch of pepper

Boil the whole chicken until it thoroughly cooked. Save the broth from the chicken. Take the skin off of the chicken and cut the chicken meat off of bones. Discard the chicken bones and skin (unless you want to use the bones and cook them later for chicken stock!)

Place the cut up chicken into the chicken broth and add all of the remaining ingredients except for cilantro. DO NOT DRAIN THE BLACK BEANS. Boil until onions and jalapenos are tender.

Right before serving add chopped cilantro. Boil all ingredients for at least 5 minutes so the flavor of the cilantro bursts!

Eat and enjoy!
