FRENCH COCONUT PIE 
1 1/2 c. sugar
2 tbsp. all-purpose flour
1/4 tsp. salt
1/4 c. plus 2 tbsp. butter, melted
3 eggs, beaten
1 tsp. white vinegar
1 tsp. vanilla extract
1/2 to 1 tsp. coconut extract
1/4 tsp. almond extract
1 (3 1/2 oz.) can flaked coconut
1 unbaked 9 inch pastry shell

Combine sugar, flour and salt in a medium bowl. Add butter, mixing well. Add eggs and beat until blended. Add vinegar, flavorings and coconut; mix well. Pour filling into pastry shell. Bake at 350 degrees for 45 minutes or until set, shielding with foil after 25 minutes. Yield 1 nine inch pie.
