FRENCH COCONUT PIE 
1 1/2 c. sugar
2 tbsp. plain flour
1/4 tsp. salt
1/4 c. plus 2 tbsp. butter, melted
3 eggs, beaten
1 tsp. white vinegar
1 tsp. vanilla
1/2 to 1 tsp. coconut extract
1/4 tsp. almond extract
1 (3 1/2 oz.) can coconut
1 unbaked 9 in. pie shell

Combine sugar, flour and salt in a medium bowl, add butter mixing well. Add eggs and beat until blended. Add vinegar, extracts and coconut, mix well. Pour into pie shell. Bake at 350 degrees for 45 minutes or until set, shielding with foil after 25 minutes.
