CHERRY PINEAPPLE BARS
2 c. flour
1 c. brown sugar
1/2 tsp. salt
1 c. butter
1/2 c. granulated sugar
2 tbsp. cornstarch
8 3/4 oz. can crushed pineapple
2 beaten egg yolks
1 c. maraschino cherries, chopped

In small bowl, combine flour, brown sugar and salt; cut in butter until crumbly. Set aside 1 cup crumb mixture; press remaining crumb mixture on bottom of 9x13 inch pan. Bake in 350 degree oven for 15 minutes. Cool slightly while preparing topping.

In saucepan, combine sugar and cornstarch. Stir in undrained pineapple and egg yolks. Cook over medium heat stirring constantly, until mixture thickens and bubbles. Remove from heat; stir in cherries. Spread evenly over baked layer. Sprinkle on reserved crumb mixture. Bake in 350 degree oven for 30 minutes more. Cool before cutting into bars. Makes 2 1/2 dozen bars.

Can't tell you how grateful I was to find this recipe. Make these every year at Christmas, bought ingredients and had lost the recipe I'd clipped from a 1970s Reader's Digest! Thank you.
