COCONUT-PECAN PIE 
1 (9") unbaked pastry shell
3 eggs
1/2 c. firmly packed light brown sugar
1 c. cream of coconut
2 tbsp. butter, melted
1 tsp. vanilla
1 tsp. vinegar
1 c. pecan pieces or halves

Preheat oven to 350 degrees. In medium bowl, beat eggs; add sugar; stir until sugar dissolves. Add remaining ingredients; mix well. Pour into prepared pastry shell. Bake 30 to 35 minutes or until center is puffed. Cool. Chill. Garnish with whipped cream and additional pecans if desired.
