CREAMED SPINACH | |
2 (10 oz.) pkgs. frozen leaf spinach 3 slices bacon 1 sm. onion 3 tbsp. flour 1 1/4 c. milk 1 tsp. salt 1/2 tsp. coarse black pepper Thaw spinach and squeeze completely dry. Grind onion and bacon; saute until bacon is done. stir in flour to make a smooth paste. Gradually add milk; bring to a boil and simmer 10 minutes over low heat until thickened. Add salt and pepper. Grind spinach fine and add to cream sauce. Makes 6 servings. |
