SPINACH WITH SOUR CREAM 
1 pkg. frozen chopped spinach
1 tbsp. grated onion
2 eggs
1/2 c. sour cream
1 c. grated Parmesan cheese
1 tbsp. flour
2 tbsp. butter
Salt & pepper to taste

Cook frozen spinach in small amount of water with onion until thawed. Beat eggs and mix rest of ingredients with spinach and onions and bake in greased casserole for 30 to 35 minutes in 350 degree oven or until center is set. Do not over cook as it will separate. Serves 4.
