CREAMED SPINACH 
1 pkg. frozen spinach, steam, drain, press out excess moisture & then blend or puree

Melt 1 1/2 to 2 tablespoons butter in a skillet rubbed with garlic. Add 1 tablespoon or more finely chopped onion and cook until golden. Stir in 1 tablespoon flour until blended. Stir in slowly:

1/2 c. hot cream
1 tsp. sugar

When the sauce is smooth and hot, add the spinach. Stir and cook for 3 minutes. Season with salt and pepper. Freshly grated nutmeg or grated rind of 1/2 lemon. Serve with slied hard cooked egg.
