CHOCOLATE SAUERKRAUT CAKE 
2/3 c. sauerkraut, rinsed and well drained
1/4 c. cocoa
2/3 c. hottest tap water, divided
1/3 c. oil
1 egg
2 tsp. vanilla
1 c. sugar
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
Chocolate Frosting

Grease sides of a 9 inch round glass or plastic cake pan. Line bottom with parchment or waxed paper. Finely chop sauerkraut and set aside. In small bowl, mix cocoa and 1/3 cup of hot water and microwave on high one minute or until thickened. Add the cocoa mixture to the sauerkraut along with oil, egg, and vanilla. Stir in remaining 1/3 cup hot water and sugar. Beat in flour, baking powder, and soda. Pour into prepared pan and microwave on 70 percent (medium high) for 7 to 9 minutes, rotating pan twice during baking. Ice with favorite chocolate frosting.

Since microwave ovens vary in power, you may need to adjust your cooking time.
