CHICKEN LOAF | |
1 env. unflavored gelatin 1/2 c. cold chicken stock 3/4 c. hot chicken stock 1/4 tsp. salt 2 tbsp. lemon juice 1/4 c. apple, diced 1 1/4 c. cooked chicken, diced 1/2 c. celery 1/4 c. walnuts (salad greens) Soften gelatin in cold chicken stock. Add hot stock and salt; stir until dissolved. Add lemon juice and chill until gelatin begins to thicken. Fold in apple, chicken and celery. Pour in loaf pan and chill. Unmold on crisp salad and garnish with walnuts. |
