EMMA'S CHICKEN LOAF 
4 c. cooked rice
1 tsp. salt
1/4 c. chopped pimento
1/4 c. chicken fat
1 (5 lb.) chicken, cooked until tender
1 tsp. paprika
4 eggs
3 c. chicken broth & milk

Dice cooked chicken. Mix ingredients, blending well. Pack into a shallow buttered baking dish and bake at 350 degrees for about 1 hour. Let stand about 10 minutes after removing from the oven. Cut in squares for serving and serve with gravy or mushroom sauce. Serves 10.
