BRAN CAKE 
CAKE:

1 1/2 c. all purpose flour
1 1/2 c. bran flakes cereal with raisins
1/2 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk
1/4 c. butter, melted
1 egg, slightly beaten

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Heat oven to 400 degrees. Grease bottom only of 8" square or 9" round pan. Lightly spoon flour into measuring cup; level off. In large bowl, combine all cake ingredients; stir just until ingredients are moistened. Spread batter in greased pan. Combine topping ingredients; sprinkle over batter. Bake at 400 degrees for 30 to 40 minutes or until toothpick inserted in center comes out clean. Serve warm. Makes 9 servings.
